The mother-in-law's eye candy is one of the sweetest sweets at parties, because the plums stuffed with kisses make a wonderful combination!

The mother-in-law's eye cake that we'll present here has a fluffy dough, drizzled with plum syrup and mother-in-law filling (kiss and chopped plums). Finally, you can decorate your cake with a homemade marshmallow - below I show you how! This stuffed cake requires a little more time to make, but the end result will make you very happy and is perfect to serve on birthdays!

Ingredients for making mother-in-law's eye cake:

sponge dough:

 4 eggs (separate whites and yolks)

 2 cups of sifted wheat flour

 2 cups of sugar (320 grams)

 1 cup of warm milk

 ½ teaspoon of vanilla essence

 1 tablespoon of baking powder

Mother-in-law's eye stuffing:

 1 can of condensed milk

 ½ box of sour cream

 100 grams of grated coconut (1¼ cups)

 150 grams of prunes (in syrup)

 2 yolks

 1 tablespoon of butter

Coverage and decoration:

 2 whites

 1 cup of refined sugar

 ½ tablespoon of lemon juice

 grated coconut to taste

How to Make Mother's Eye Cake:

Separate the ingredients from the cake dough, remembering that the milk needs to be warm. Preheat oven to 180-200 degrees and grease and flour a tall pan (20 cm in diameter by 10 cm in height) or just cover with parchment paper at the bottom.

Tip: If you prefer a smaller cake, you can choose a pan with a larger diameter, but it needs to be tall, as this dough grows a lot!

Beat the egg whites and set aside.

Tip: To make the whites rise and set faster, add a pinch of salt.

Beat the sugar and egg yolks in an electric mixer until light and fluffy. Add warm milk and beat some more. Then, slowly mix the wheat flour and continue beating until it forms a smooth and homogeneous dough. Finally add the baking powder and mix gently.

Add the egg whites to the dough, gently mixing with a spatula from the bottom to the top, so that the cake is airy, light and fluffy. Place in the tin and bake the cake for approximately 45-50 minutes or until it passes the toothpick test. Wait for the cake to cool before unmolding.

While the cake is baking, prepare the mother-in-law's eye filling by separating all the ingredients, this will make the process easier.

Tip: If the plums don't have syrup, just bring them to the fire with 1 cup of water and 1/2 cup of sugar, and let it boil for 5 minutes. Then drain the plums and set aside 6-8 to use in cake decoration.

In a saucepan, place the condensed milk, the sifted egg yolks, the grated coconut and the butter over low heat, stirring constantly until it thickens slightly and comes off the bottom of the pan. Add the chopped plums and sour cream, mixing well. Place this filling in a refractory and cover with plastic film. Reserve.

Tip: Set aside some of the candy to prepare some mother-in-law eyes to use in decoration.

You can decorate your cake with whipped cream if you prefer, but we'll teach you how to prepare a homemade marshmallow! To do this, add the egg whites and sugar in a pan and cook on low heat for 3 minutes, stirring constantly and a few times removing the pan from the heat, so that it does not cook. The point will be very creamy, like the one in the photo below.

Then place this cream in an electric mixer and beat for 5 minutes on high speed. Add lemon juice and beat some more. until you reach the point that will resemble the whipped cream point.

Tip: If you want a decoration with spout work, we suggest you double the recipe.

Begin assembling the cake by cutting it into two or three pieces, depending on its diameter. In the same way that the cake was baked, place one of the parts on a plastic (to facilitate the assembly and time to unmold it). Drizzle the cake layer with the plum syrup.

Place a portion of the cooled mother-in-law's eye filling, spreading it well over the cake dough. Repeat this process until the dough is finished. Close the cake and refrigerate until it's time to decorate.

Unmold the cake on a serving plate, garnish with marshmallow and cover with grated coconut. To make the cake even more beautiful, we suggest you put some mother-in-law eyes on it.

Tip: We prepare the mother-in-law's eyes with the reserved plums, opening them in half and filling with the kiss.
