Creamy Cob Green Corn Cake Recipe

It can be enjoyed at any time of the year and there are several corn cake recipes: drier, creamier, with corn flour, just with wheat flour, etc. Regardless of the ingredients used, one thing is certain: it tastes naturally sweet!

The advantage of using green corn on the cob instead of canned corn is that the cake has a more natural taste, which pleases especially those who love corn! Ingredients for making creamy corn cob cake:

 1 cup of common wheat flour

 1 can of condensed milk

 ½ cup of butter

 4 medium eggs

 1 tablespoon of chemical yeast

 1 teaspoon of vanilla essence

 6 ears of corn

How to Make Creamy Cob Green Corn Cake:

Melt the butter in the microwave and place in a blender or food processor together with the other liquid ingredients, ie eggs, condensed milk and vanilla. Beat until well blended.

Tip: Preheat the oven to 180ÂșC (medium oven).

Then add the dry ingredients in a blender: wheat, baking powder and half the corn kernels. Beat until smooth, add the rest of the corn and beat in 'Pulsar' or simply mix with a spoon if you want to keep the whole grains.

Grease and flour a cake or pudding tin and pour the corn cake batter into it. Bake in a preheated oven at 180 °C for 50 minutes or until you pass the toothpick test (stick a toothpick in the center of the cake: if the toothpick comes out clean your cake is ready).

Tip: In this recipe I used a 20 cm diameter pan.
