Sweet papaya with brown sugar

Papaya candy: this is the kind of candy that reminds us of childhood memories, of the times we stopped to taste that homemade candy made by our grandparents! The recipe that we will present here, also known as furrundu in the Mato Grosso region, is a delicious papaya sweet made with brown sugar and coconut, with that remarkable flavor and aroma of cloves and cinnamon!

To make your candy, the papaya needs to be green or "at once" (stage between green and ripe, with firm pulp). The result is wonderful and you will surely like it!

Ingredients for making Papaya Jam with brown sugar:

 1 green papaya or at a time (about 1 kg)

 300 grams of brown sugar in pieces

 1½ cups of water (approximately)

 50 grams of grated coconut (optional)

 cloves (to taste)

 1 cinnamon stick

How to make Papaya jam with brown sugar:

Start by separating the ingredients you will use to prepare the papaya jam. Make small scratches on the peel of the fruit with a knife, in order to extract the milk that usually makes the sweet bitter. After that, wait 1 hour to start the recipe.

Tip: The papaya must preferably be green or it may be at the beginning of the ripening stage, but the pulp of the fruit must be firm to go through the grater.

Open the papaya in half and remove the seeds. Discard the shells.

Tip: The fruit we used had a very firm pulp, although it was almost ripe in color.

Then grate the papaya on a coarse grater.

In a medium saucepan, place the grated papaya with water covering the fruit and let it boil for 30 minutes.

Drain the water from the pan. This process is important to extract the milk from the papaya and prevent the sweet from having a bitter taste.

To extract all the water from the fruit, use a thin, clean cloth.

In a pan, place the grated papaya and the other ingredients: the brown sugar in pieces, the cloves, the cinnamon and the water (1 cup and a half).

Allow the candy to cook for about 20 minutes or more, until the brown sugar is completely melted and the candy is slightly creamy.

Tip: If you prefer sweets with more syrup, just add more water and more brown sugar and heat again until all the ingredients are incorporated.

Turn off the heat and wait for the candy to be warm or cold to place in a pot. Serve next!
